Generosity...and Gratitude!

Thanks to the generosity of some kind folk (Thanks, Mom, my friend, Anna and anonymous neighbors!) we had some awesome fried zucchini with our dinner tonight!
Unfortunately, all 13 zucchini plants that we planted got 'eaten' by a grub...along with 9 cucumber plants and I think my butternut squash as well. (we'll see...I hope not!) I know a couple of friends that this happened to as well, and next year, I'll be prepared!
But tonight...hubby requested fried zucchini and GF pasta with sauce for dinner. So, Meghan and I made a tempura batter using rice flour & cornstarch and it was the best fried zucchini I think I've ever had! (ok...we fry twice a year...this was one of those times!)
So....since we accept any and all donations of produce that others may have too much of....I will be stuffing zucchini and shredding it to freeze as well. I would like to make dehydrated zucchini chips as well as zucchini pickles and regular pickles as well. I would love to try fermented pickles and some homemade fermented sauerkraut as well. (Nourshing Traditions has tons of recipes for fermented veggies as does Mary Jane's Farm)
We've been picking and eating lots of green beans from our garden and looks like we'll have plenty of celery and peppers as well as tons of tomatoes this year. (Hooray!) Think I'll clean out the garden beds and will be planting some lettuce for the fall...now that we are fenced in, the 'critters' won't be eating all of our efforts!
Thanks again, all, for the generous gifts of zucchini! Hope everyone is enjoying a wonderful summer! ~Sue~

Well here's something funny. In the three years that I planted a garden, zucchini was the ONE plant I could count on harvesting. Even if everything else died, we always had more zucchini than we could possibly eat. I think my neighbors used to bolt their doors when they saw me coming...."Oh, no, she's bringing MORE zucchini."

Anyhow, the fried zucchini looks great. I love it...dipped in ranch!!

Hugs,
Patti

I have been lacto fermenting pickles the past few weeks and hope to get to some cabbage real soon. I LOVE the old fashioned flavor of these fermented veggies! I also have a Excalibur dehydrator that I am reviewing, and have soaked/dried some raw almonds and last night set in 2 quarts of raw milk for yogurt. YUM! Now I have to look around for room in the fridge...this stuff takes up a LOT of room!

I'm sorry to hear that about your veggies. Dad had mentioned to me tonight something from underground might be eating off my zuccini..My one planted is loaded with starters but the other 3 plants died..Peppers, and celery doing good and we have green tomatoes..It is amazing how flavor full all the garden veggies are. Have a lovely weekend my friend

It was nice to meet you in real life today! Sorry to hear about your zucchini - makes me glad for the 8-10 fruit I got off my two plants. But it's neat to see how God blesses in other ways such as the generosity of others as well as the fruit of our hands. Blessings,
